FIRST COURSE
- Golden fried polenta crusted calamari, tomato and chilli jam, caper and fennel dressing
- Marinated pigeon breasts, grain mustard mash, port wine jus
- Tian of west coast crabmeat, spring onions, apples, sesame crisps, lemon and chive mayonnaise
- Galette of organic irish goats cheese, balsamic roast tomatoes and pesto dressing
- Galia melon, parma ham, citrus fruits, berry compote, raspberry sorbet

- Grilled sirloin of prime irish beef, red onion marmalade and béarnaise sauce

- Fillet of turbot, cauliflower puree, champagne beurre blanc
- Baked fillet of cod, carrot and cumin, saffron cream sauce
