The British Hospitality Association is delighted to be able to introduce members to Abalone Chonamara Teoranta, farmers of the highly-prized shellfish Abalone, the Japanese and European varieties, known as the ‘truffles of the sea’.
On Monday 9th November, the association will welcome abalone seafood farmers, Cindy O’Brien, and Jean Le Dorven from Connemara as well as Michael O’Neill from Cork. They will be accompanied by Tim O’Sullivan, Head Chef of the renowned Renvyle House Hotel in Connemara, who will demonstrate enticing and innovative ways of preparing, cooking and presenting this much-prized speciality seafood.
These Irish-grown delicacies are born and reared in a state-of-the art aquaculture farm on the rugged shoreline of Rossaveal where the Atlantic Ocean meets Galway Bay and just off Cork on the South Coast. They are fed on locally harvested seaweed (no artificial additives or substitutes) and kept in pristine waters that are constantly filtered and monitored. As evidenced by their enthusiasm for eating, growing and reproducing they are as happy as, well clams only much more substantial and much, much tastier!
This Masterclass offers an ideal opportunity for you to discover or re-aquaint yourself with this delicious and versatile shellfish which is now ready to be supplied direct from the South and West Coasts of Ireland to the London Market.
